Apple Chip Cake

Can we all collectively drown our sorrows in cake for a day?  First of all, the Broncos lost the Superbowl yesterday.  Second of all, they looked like a high school team out there.  Third of all, my sister now gets to gloat that the team she was rooting for won.
Not only was it a bad game because "my team" lost, but because it was so lopsided, it was also unbelievably boring.  This is precisely why I watch hockey.  I will say that football food is better than hockey food though.  Actually, I don't know what hockey food is.  If I had to guess, I would say poutine?

In other sporting news, this weekend the Olympics start!  And you know there's no better way to support the (American) athletes than with apple pie chip cake!
APPLE CHIP CAKE (makes 2 - 8" rounds)
Recipe from Aunt Linda
1 1/4 c. vegetable oil
2 c. sugar
2 eggs
3 c. apples (peeled, cored, and cut into small pieces)
1/2 c. chopped pecans
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
3 c. flour

1.  Beat together vegetable oil, sugar and eggs.

2.  Stir in remaining ingredients in the order listed.  The batter will be thick but smooth.

3.  Pour into 2 layer cake pans (do not grease the pans).  Bake at 350˚ for 50-60 minutes (check doneness with toothpick in center of cake).  Serve warm or cold, with or without ice cream.
