Lemon Buttermilk Pancakes

I hope you all had an amazing Valentine's Day, an amazing week, and I hope you're gearing up for an amazing long weekend!

We're going to try to head out of town over the weekend and since it's been unseasonably warm, we're planning on taking Dingo on her first camping adventure!  Normally she sleeps by herself downstairs, so we'll see how that transition goes...
We haven't really prepared for a camping trip at all which tends to be how it goes with us, but it feels harder with a puppy.  Especially a puppy that gets carsick.
So what will happen tomorrow is: we'll wake up, go to yoga, come home make some pancakes.  Pack the car up and get to where we're going around dusk.  We'll have to set up our tent in the dark.  Eat fast food along the way and won't see just where our perfect campsite is until morning.

At least the pancakes will be good!


LEMON BUTTERMILK PANCAKES
1 1/2 c. flour
3 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
zest of one lemon
1 1/4 c. buttermilk
1/2 stick butter, melted
2 eggs
1 tsp. vanilla

1.  Whisk together flour, sugar, baking powder, baking soda, salt and lemon zest.

2.  Whisk together buttermilk, melted butter, eggs and vanilla.  Stir into dry ingredients until just combined.

3.  Drop by 1/4 cupfuls into a greased/buttered skillet.  Cook until bubbly, flip and cook the other side.

  3. Delicious! Just made these for the family for dinner (breakfast for dinner is so good!)and these are so good! Light, fluffy, quick to put together, drizzled with warm maple syrup and sautéed fruit. Will definitely make these again. Thanks for sharing!
