I'm not the type of person to get super pumped about a salad. That's not to say I don't like them, I just don't usually love them the way some people do.
What it really comes down to is that I like carbs. The heavy, dense, complex ones.
Quite frankly, a meal just doesn't feel complete without at least 1 potato. So a salad with a potato in it seemed like a pretty good compromise to me.
Add in some quinoa and you're practically a health food guru.
SWEET POTATO QUINOA SALAD (serves 4)
2 sweet potatoes
2 tsp. ginger
olive oil
salt & pepper
mixed greens
1/4 c. sesame sticks
1/4 c. quinoa, cooked and cooled
parmesan cheese
freshly ground black pepper
vinaigrette or sesame salad dressing
1. Preheat the oven to 375˚. Peel and cube the sweet potatoes. Toss with ginger, olive oil and salt & pepper. Bake for 20-30 minutes (tossing 2 or 3 times). Test doneness with a fork. Set aside to cool.
2. Assemble your salad by layering greens, sesame sticks, sweet potatoes and quinoa. Sprinkle with parmesan cheese and freshly ground pepper.
3. Toss with a vinaigrette or a sesame salad dressing.
